Here is our first small harvest! Thanks to my sweet kiddos for picking them!
This is the first year that we haven't had more squash and zucchini than we could eat. Without water, they struggle! But, this week we've had zucchini bread, zucchini tots (kind of taste like a mix between tater tots and sausage balls), and grilled veggies. Here's my favorite way to grill veggies!!
1. Wash and peel squash and zucchini. You can also put peppers and onions in with them if you want.
2. Dice veggies and place on a large piece of aluminum foil.
3. Drizzle with melted butter or olive oil OR put small pats of butter on top of the veggies. I've tried doing it without the butter or oil, and they just dry up too much. Then, sprinkle with your favorite seasoning. This is mine!
4. Fold up the foil into a "pouch" and crimp the edges together like this. DO NOT VENT IT.
5. Throw on the grill when you're grilling your dinner. I usually have mine on our grill's top shelf, but you don't have to. The indirect heat does work better. Keep pouch closed until ready to serve. Enjoy!
