Recipe Roundup, week 4

Spinach Quiche Bites   YUM!!!!!!!!!!!!  A little too salty for me, so I will leave out salt next time.  Parmesan and spinach have enough of a bite to them without extra salt.

Homemade Hot Cocoa - everyone liked this!  Even my "Why can't it be Swiss Miss?" kids!  It also reheated well after being refrigerated (just shake it good to mix chocolate back up).   Top with homemade whipped cream.  Delicious!

Chocolate PB muffins I didn't eat these, but the consensus was too dry and not peanut-buttery enough.  Next time I am going to try to sift the flour first to make it lighter and add a little more peanut butter and maybe an extra egg or oil for moisture.  They liked them "okay" but said hard to swallow because of dryness.

Chocolate Eclairs  - As my son says, these were A--MAZ--ING.

Last week I posted Elaine's Most Excellent Sandwich Bread.  I tried it as hot dog buns, but it did not work.  The buns sat on the counter to cool, but instead of cooling they became HARD AS ROCKS.  It is still my go-to bread recipe, but it wasn't the best for buns.
